It's unlikely that you will be asked for further proof of earnings now.
Don't panic. As long as you are earning what you said you would be before you complete then that is all that will matter.
You can explain why your hours did not increase in the timescale if asked but genuinely, you are earning what they deem to make your mortgage affordable now before it starts - that is all that matters.0 -

If you are earning the money now I see no reason to? If you didn't get the increase I could see why you'd need to say something.
I got out mortgage offer the day before I got a 3k pay rise and was told no need to say to our lender about the increase.0 -
I have definitely got the increase. Just a few months later due to childcare issues. I didn’t want to pay for childcare in the meantime as it wasn’t accounted for in my affordability. A family member is now able to look after him.0
