Use whatever you are happy with. Personally, I use just Westons cider, but that's also because there are so many coeliacs in our family, and cider is safe for them to eat (and drink) rather than stout or barley wine. If the cider you have is too low, then add a couple of tablespoons of brandy to it, and that will up the alcohol content.Sealed Pot Challenge no 035.
