Employers paying final salary pensions

Does anyone know if any companies that are offering a final salary pension for new joiners? Otherwise is it just Local Gov, Civil Service, Teaching / NHS?

If you literally mean 'final salary', then none of those do, though they are still full DB. The Railway's Pension Scheme still has sections that offer new FS benefits, though I think this is typically after a few years employment, I'm not sure (hopefully someone else reading is more informed).

Lots of (mainly) larger companies still have DB pensions, most are probably CARE by now

Civil Service went to CARE for new joiners in 2007, when the nuvos scheme was introduced.
