Final Checks before sign off

OK, I'm sure this has been asked a thousand times before so many apologies.
I currently have a mortgage application going through Pepper Home Loans. They have had all my paperwork, it appears the mortgage has been underwritten and the house I'm hoping to purchase has been valued. I know they have valued it at the same price as the asking price.
Pepper have told me it now needs to go through some final checks. They have told me this physical process should take about 1hr but they have quite a backlog so its going to be a few days before this happens
So my question is what are these final checks? Is it just a formality now?

Underwriting sign off. An individual with the appropriate level of responsibility and authority has to approve an issue of the mortgage offer on behalf of the lender.0 -
