meat in mash

Hi

I was just reading the meal plans for this week and noticed corned beef hash on somebody's menu. This has just got me thinking about two things actually.
Firstly -I want to get to grips with this meal planning but am thinking about doing a 3 or 4 weekly rota so we don't get bored, and so the kids start hating a certain day (because it is rice for example). This would also be a good way to get dh into the kitchen, as I could write the menu out and the recipe and directions/quantities for each meal. (he finds it difficult to cook as he has OCD and needs exact measurements/timings or he starts panicking).
Does anyone else do this if so does it work or does it still get tedious?

Secondly - I don't mind corned beef hash but dh not a fan as he thinks it is fake meat, I have in the past done cheesy onion mash, but kids don't like onion and I am trying to lose weight!!!! Are there any other meats that could be mashed into the potato like this?

    Not much help on the meal planning front Mel I can't stick to plans.

    Meat hash -you can make a hash out of any leftover meat. These are especially good with Sunday roast remains. All the better if you have leftover gravy plus veg. Gammon/baked ham is great in a hash. I've even seen a recipe for salmon hash, and i should think smoked mackerel would be good too ;)

    You can do the "cornedbeef hash" in other ways....
    use your chicken carcass to make stock... add all the veggies and add leftover chicken towards the end

    Breast of lamb too...cook it first, strip it off - use the bones to make stock add the veg and cook and add the meat to the veggies towards the end

    I do both of these as corned beef hash is one of my faves

    also if you have leftover mash, add some cooked onion, about 4oz of raw mince and i skinles sausage bashed up... mix well and stick a lid on it it makes a lovely "savoury meat pie"

  • I often make "Red Flannel Hash" with the CB substituted with Bacon Grill or Chopped Ham and Pork - Very tasty too.

    Loads of recipes on google
    The quicker you fall behind, the longer you have to catch up...

  • Well, do you know I have never thought of using anything but corned beef in a hash. Dont know why not , I am usually quite adventurous in adapting recipies.

    Left over pork hash here we come.

  • Mmmm, you've got me thinking now! I wonder if cooked sliced sausages would work. A new slant on sausage and mash suppose if it's all fried up together.....

    If you're watching your waistline though, I would go for the leaner cuts of leftover roast rather than corned beef.

  • The dutch eat something calles Stampot, which is mashed potato with onions, vegetable - cabbage, carrot or curly kale - roughly mashed into it, and sometimes some meat mashed in too.

    It is not mashed to a smooth paste, but more squashed together!

    There's something similar I ate in Holland that (I think) was called Sauerkraut with bacon and sausage (Zuurkool met spek en wurst). Basically, it was mashed potato, cooked smoked sausage (sliced), fried bits of bacon (smoked), and sauerkraut all mixed together (same sort of consistency as corned beef hash). The sauerkraut is a really nice addition as the sourness cuts through all the heaviness of the meat.

    Not a dish for when you're watching your waistline but really, REALLY good for cold weather (and inexpensive).


    PS The smoked sausage is the one that's sold in a "horseshoe" shape and needs boiling in water for about 15 minutes. They're usually sold for around £1.

    PPS Tesco currently selling huge jars of sauerkraut for 70p - for 2 people you'd only need half a jar

    PPPS That particular sausage is also really good sliced up in home-made pea soup (onions, stock, dried split peas, a little mint, sliced sausage - very filling; very cheap).
