Mortgage - interest rates, credit ratings etc

My hubby & I currently live abroad to benefit from the increased salaries and save as much as possible towards our house on our return. Our plan is to come back in 18 months/2 years and we will have saved around 160k for a deposit and will be looking to purchase a house around 300 - 350k.... (Max mortgage 200k)
Our monthly net incomes before we left was nearly 5k between us so I'd expect a joint minimum of 4k when we return so this is more than affordable. I know we will need to be employed for around 6 months before we can get a mortgage.
My hubby already has a BTL apartment which is on a guaranteed rent scheme so the costs are completely covered. In 2 years I think he will have approx 105k equity and 80k mortgage outstanding. The hubby is ok as he still on the electoral role at his parents house and he still has his UK bank account with the mortgage/rent coming in & out each month so his CR has continued to build whilst he has been away.
Me on other hand.... Halifax closed my current account (but kept my savings account with 20k open) and I didn't really use credit much in the UK before I left so I need to build it up as much as possible. I am starting to work on this when I come back to visit at Christmas (any suggestions welcome).
My questions really relate to whats the best kind of mortgage to get.... does it matter that he already has a mortgage? How can we get the best interest rate? Please do spam me with information as I'm completely lost.

Being in a job is probably not the most difficult part to overcome.
It will be your lack of time in the UK.
With your deposit it should be possible, but I think you are going to need a broker as it is unlikely you will get a normal bank. Thank you. Good to have a bit of reassurance that it will be possible in some way. It's been bloody hard being away from family/friends so to not be able to get a mortgage at the end of it would be so frustrating!0
