Vegetarian meal ideas?

I'm looking for meal ideas, so breakfast lunch, dinner and snacks that don't cost more than £15-£20 a week. :p :A
I should mention I hate eggs unless cooked in a veggie burger, etc. I can't eat them on their own.

  • Hi veggie geek. Have you ever tried making seitan? No good if you're gluten free as it's basically wheat gluten! but it's a very cheap source of veggie protein.


    You can make 4 portions from 6 cups of cheapo flour. It's easy but a bit time consuming.


    You mix 6 cups of flour to 2 cups of water and give the dough a good knead until it's nice and elastic. A mixer with a dough hook is good but I do it by hand.


    Cover with water and leave overnight.


    The next day, knead and rinse until all the white starch is washed away and you are left with stringy squishy gluten.


    Then press it together and squeeze the water out. Cut into cubes and simmer in veg stock for 30 mins. It all puffs up. Then use it like you would tofu.

    But if you really want to do it on the cheap and without lifting a finger, cereal and a fruitbowl are your friends. I did it for years before my poor diet made me very ill!!

    Do bear in mind she has a tendency to make rather small portions. So you might need to increase the amount of ingredients she uses and/or serve with something else.

    A good cheap and filling meal I make is soup. It's a very hearty soup. So onions, celery, carrots, potatoes, kale or cabbage [preferably kale, it doesn't go mush and Lidl usually have it in towards and during the winter] or squash, preferably not butternut, it's too sweet, and a couple of tins of borlotti beans, with a knorr veg stock pot [ they can usually be found on offer]. Only just cover the veg with water, make a big pot and it'll last for a couple of days at least, or go in the freezer.
    You could also do dumplings with it..WHen I didn't have a garden I used to get my herbs by taking them from either public gardens or trees or by asking anyone who had some in teir front garden...Herby dumplings all the way.

    Egg and chips :)
    Egg, chips and beans :)
    Cheese omelette and chips ... and beans
    Spanish omelette ... er, chips and beans

    Beans on toast
    Cheese on toast

    Jacket spuds ... beans and/or cheese.

    Quiche, with a gazillion variations of fillings.... preferably with chips and beans :)

    Veg stew, veg curry, veg chilli.

    You can make variations of potato-based rissoles, deep fried in batter or oven baked and coated with oats and or breadcrumbs. Anything from pea fritters to cheese/onion, or even stuffing fritters.

    Veggie samosas are nice... and onion bhajis.

    Mac cheese is cheap and yummy.

    Egg and soldiers for breakfast... except you don't like eggs :)

    Simple sandwiches of cheese/tomato, or just tomato. Or more complex ones with cheese/pepper/apple/sultanas.... (although peppers can be pricey).

    Peanut butter sandwiches ....

    Here are some between 17-70p per portion. With porridge for breakfast and by eating leftovers for lunch, should come well under budget.

    We spend under £50 a week for three of us (vegans) and 2 cats, including toiletries and cleaning products.

    Thats very good going!

    Much as I like cats - and to a lesser extent, dogs - I cannot have meat in the house. The smell of their food would make me sick. Give me a rabbit any day!

    I've a book suggestion, for any veges and would-be vegans out there. I'm not a vegan myself but I use the book a lot. It's sadly no longer in print but available for not very much money on the internet
