large roast beef cooking times

Hi,
I need a little reassurance about cooking times. (Bit worried lots of people coming & I've never cooked such a large piece of beef)
I'm cooking 8lb roast beef.
It's in oven at 200 c with foil on. I'd like it well done.
Any advice on how long to roast and how long to stand before carving.
I love some (I know what I'm doing) tips before my mum-in-law arrives and starts to give advice.
Thanks
Nikki

Hi nikki,
Dust the joint with mustard powder and black pepper.
For and 8lb piece of beef pre-heat the oven to 250 degrees, and blast it for 20 minutes before turning the oven down to 190 and cook for another two to two and a half hours for well done.
For that size of joint I would allow it to rest in a warm place for at least 30 minutes.
