I don't understand what the issue is here at all.
You phoned in sick on Monday so M=1, T=2, W=3, T=4, F=5, Sa=6, Su=7.

These rules regarding sickness go back to the introduction of statutory sick pay. For SSP every day of sickness has to be accounted for, it does not matter if you would or would not be working on a certain day it has to be recorded as a day of sickness if on that day you did no work and you were not capable of work due to sickness. If you would normally work then it is recorded as a qualifying day, if you would not be working normally on that day it is a non-qualifying day.
These non-qualifying days can be important regarding SSP
Firstly you need 4 of these days either qualifying or non-qualifying in a row before SSP is recognised so a sickness from Saturday to Tuesday would need to be recorded as 2 non-qualifying days and 2 qualifying days if you worked Monday to Friday.
Secondly it might have a bearing on linking of PIWs, these periods of sickness if 8 weeks or less apart count as one continuous PIW so exact dates of sickness are required, to establish if there is a link or not.0
