Sorry, a bit off thread but I've found a solution for chunky chips which are a bit hard in the middle after cooking to the manufacturer's instructions.
A couple of minutes in the microwave before putting them in a hot oven seems to start the defrost and produces lovely, fluffy- in- the middle, crispy outside chips. Worth a tryThe beautiful thing about learning is nobody can take it away from you.

I really don't like oven chips, but done in an actifry and they come out really well cooked. I like the aunt Bessie skin on rustic fries. I have only just seen them in the shop and they are as good as I have had done in a chip pan.0

Just read through and now really fancy some chips
but I never make any at home at all and only eat them once every four weeks at quiz night at the local pub where we get a small supper on a Tuesday night included in the price of our quiz £2.00 for a night out

M&S Maris Piper potatoes are £1 per kilo (£2.50 for 2.5 kilos), and they make a great oven chip.
Follow the usual procedure - peel, soak in water, pat dry, cut into chunky chips, dry between two pieces of kitchen towel, 1TBS of olive oil in a bowl, thoroughly coat the chips in oil, place in preheated 200C oven on a baking tray for 25-30 minutes, removing halfway to toss them around a bit without breaking them, remove with a proper slice with holes so that oil drains away, and place chips on kitchen roll to drain excess oil.
They should be evenly golden, with a crisp exterior and fluffy interior.
Add coarse sea salt and a dash of red wine vinegar.0 -

I do something very similar.
One tip passed on by a friend is to cook on one of those mesh trays (Mine is from the £ shop) rather than a baking tray. I put that straight onto the oven shelf and turn around once half way through cooking. Tossing around isn't necessary as they're being cooked from top and bottom.0 -

..........The chip stirrer broke a year ago when I dropped it, and the side protectors broke their hinge a while back however unit still works fine - cost about £150 to buy the unit and i'm still using the same one I got 5 years ago, so proved a good investment.
If you want healthy chips, you won't regret getting an Actifry.
I'll 'second that'! Love my Actifry and I've been using it for around 10yrs now. I did manage to drop the 'chip stirrer', but managed to order a new one from Tefal
. Mine doesn't have the 'side protectors' on it - is that the thing that goes around the rim to stop chips from jumping up into the edge of the lid?
I don't even use a 'full measure' of oil in mine, and it still works just as well. Great to add some paprika, chilli powder, cayenne, garlic powder - better than anything I've ever bought frozen!
