I googled *low calorie ice cream recipes* and found several. This is one: low calorie ice cream.

eeerrrrr "1 can sweetened condensed milk" Not exactly low calorie in my view. Shame, I was hoping to find that sweetener would work so that I could make for son with diabetes. Back to the drawing board ...
Edit
this one looks better, although does involve messing about with gelatin which I find tricky.

Make as normal, but have a smaller portion.
No point in messing about with HM Ice Cream - it's the simple combination of eggs, sugar & cream that makes it so perfect - just look at the list of "ingredients" on any bought "luxury" branrd.Warning ..... I'm a peri-menopausal axe-wielding maniac0 -

I would think it's fine.
The issue with cooking with substitutes is generally how they can be affcted by heat. Never heard of anything food stuff becoming "unstable" with cold.
I make a chestnut ice cream (not low sugar) in which I use low fat evaporated milk. I guess if you used fruit with a sweetener and evaporated milk you could make a very skinny ice cream!I lost my job as a cricket commentator for saying “I don’t want to bore you with the details”.Milton Jones0
