Gluten Free Old Style-ish

I was diagnosed as Coeliac, on my 66th Birthday, which came as a total :eek: to me.

Ready-made Gluten-Free Meals are 'OK-ish', but not brilliant so I'm doing my best to come up with recipes 'from scratch'.

I CAN bake, but have always been scared stiff of baking anything at all that involves using yeast - besides which, too much bread, doughnuts, pizzas etc are NOT good for my waistline, hence a life-long weight problem,.

Just wondering if anybody else on here is also Coeliac/Gluten-Free and if you've got any recipes that you'd like to share with me.

Tonight we've had a Minced Beef and Veg Chilli made using 250gms of Minced Beef (which also yielded 2 more portions for the freezer) with Pasta (ordinary for OH and GF for me) and HM Garlic Bread (ordinary Ciabatta spread with Garlic Butter for OH and GF Bread with Garlic Butter for me) which was toasted in the Halogen Oven.

    Honestly, unless you are a Paul Hollywood's sister I would forget about trying to bake GF bread, it's just awful no matter who makes it.

    Seriously, just wipe GF wheat flour off your radar for anything but batter recipes and concentrate on the grains you can eat.

    There is a website The Gluten Free Alchemist - someone who learnt gluten free cooking when her daughter was diagnosed as coeliac. Fabulous cakes etc. I agree about GF bread, it is hard to make a decent loaf yourself, but Schar GF bread is ok (although pricey).

    I've been diagnosed now for 25 years and basically just eat ordinary food, I don't usually bother with substitutes . Meat, veg, fruit, potatoes etc are all GF as is rice at least half the sausages and burgers from high street supermarkets are now GF, as is fish .

    I had shepherds pie yesterday and sausage and mash today. I occasionally buy a loaf of GF bread if I'm at work and need to make sandwiches, but otherwise tend to not bother. I've never enjoyed a lot of pasta so don't bother with that much at all.

    I sometimes bake and if I do I use Doves farm gf flour, I have never successfully made bread though.

    Just watch for hidden gluten in things like gravy and soups, even things like chips when you are out can be difficult as a lot of places only have one fryer and the oil will be contaminated with gluten from other foods.

    It just becomes second nature though to check everything.

    Where I live, we can still get some GF Items on Prescription - as I'm now 67, that means that it's FREE! A great source for GF Bread, cereal/GF Oats and GF Flour Mixes. I've had some good succeses with baking with the GF Flour Mixes.

    One of the items that completely took me by surprise as containing Gluten was Soy Sauce - so used to the majority of 'gluten stuff' being thick and creamy :( . Most of my favourite Chinese Foods are now off-limits, unless I come up with my own using my own GF Soy Sauce - especially in a Stir-fry.

    I'm lucky that we have a fabulous chippy - with good prices - nearby where they have a totally separate GF Fryer :j ! Only time it's not available is on a Sunday afternoon when they close for 'fryer cleaning'.

    Love the 100% Beef Burgers that you can get in some butchers as well as Aldi, Lidl, ASDA and Tescos - really great quality. Better still when I can get some good Minced Beef on Whoopsie to make my own ;). Same for the GF Sausages - some of them are quite inventive with the flavourings as well - and Thank Goodness for GF Gravy Granules ;) !

    This is my go to site for recipes too. Best bread for me is the M&S sliced GF Brown Seeded.

  • I have come across Bistro Express ready meals and they are far superior to anything out there at the moment. They have a range of 3 gluten free meals and I know they do some sort of offer to get free delivery.

    Delia Smith has a lemon drizzle cake recipe made with mash potato !

    I have made it when I needed a gluten/nut/dairy free cake recipe & it is very good.

    I think she does a chocolate cake but I haven't tried it.

    Check out Tamari Sauce - most are gluten free. Use it instead of soy sauce and work away - tastes pretty much the same.
