Different meals from a spag bol basic recipe

    At a cookery lesson at school nearly 40 years ago we were taught to make a moussaka ish recipe. Not the kind we have now but the teachers recipe. My family loved it.
    All we did was made a Bolognese sauce. Layered this between sliced potatoes.
    Then made a white sauce, cooked it and beat in an egg. Cheese was sprinkled on top of the last potato layer. The white sauce was added and then it was baked slowly for 90-120 mins. It was enjoyed by all our family.


    My suggestion would be to make a couple of cheese sauces and freeze these with the Bolognese sauce. You then have lasagne and pasta bake options (pasta bake could be the Bolognese mixed with pasta shapes) layer of cheese sauce on top and baked. Or the pancake recipe mentioned in an earlier post.
  • As a child we lived in Australia we at a dish that was basically made from a product similar to Bachelors Savoury Rice, we added mince & tomatoes, veg & tomatoe puree (basic bolognaise) cooked it slowly so liquid absorbed into rice. Product was called Rice-a-rising, excellent party dish, wholesome mid-week meal.

    I made some chilli the other day which as a singleton im not a fan of batch freezing. I had chilli twice and on the third night I had the remaining over a burger and halloumi, no bun, was delightful.
  • I use my basic Bolognese recipe on a pizza. I buy a basic Pizza base and use the Bolognese instead of the tomato sauce. Add cheese and anything else you want, veg or meat that needs using.
  • Make a basic mince mix( no tomatos).
    Add cooked macaroni mixed in, or
    Macaroni in cheese sauce instead of lasagne sheets.
  • Here's a recipe you might want to try, although its not anything to do with batch cooking and freezing:-

    MINESTRA (MINESTRONE OR VEGETABLE) SOUP
    400grms potatoes - new prefered; 400grms carrots; 400grms cabbage -
    green or savoy, or greens; lge tin baked beans; lge tin red kidney beans
    (optional); 2 cups (frozen or fresh) peas; pkt onion soup mix (optional); 2
    tblsps tomatoe puree; 1 tblsp veg oil; salt & pepper to taste. 200/300 grms
    pasta or 160 grms long grain rice.
    STAGE 1. Shred cabbage. slice carrots and cut potatoes up to bite size
    pieces and place in large pot & cover with water. Add salt. pepper,
    tomatoe puree, veg oil. and onion soup mix if using this - recommended.
    Also add fresh peas if being used and rice if not using pasta. Bring to
    boil and cook for 10 murutes.
    STAGE 2. After 10 minutes, add tin(s) of beans and frozen peas if not
    using fresh peas Also add pasta if not using rice. Cook for another 10
    minutes. If using small elbow macaroni or some other small pasta. It
    should be ready after i0 minutes. lf using larger pasta, add earlier so that
    the total time taken is not more than 20 minutes overall.

    Add more water so that there will be enough gravy for each serving -
    serves 6 -8 depending on portion s1ze.
    NOTES
    1. You can add any other vegetables, pulses or beans to your liking.
    2. Serve with grated cheddar, cubes of cheddar or parmesan cheese, or
    any other cheese you prefer.
    3. Instead of cooking all the pasta at STAGE 2, you can stop cooking at
    STAGE 1 and add the beans and peas at STAGE 2 but not the pasta. Put
    the pot in the ftidge, and take out a portion when you want one, add
    suffrcient pasta for one portion and simmer till pasta is cooked. The pot
    of vegetables will keep for about a week or more in the fridge.
    4. This is a nutritious and cheap meal, which happens to be vegetanan
    and is so tasty, even children like it, especially if the cabbage is cut up
    small. Al1 vitamins and minerals are retained except those destroyed by
    cooking.

    NB I copied and pasted the recipe from a PDF document which may be the reason for any remaining incorrect alterations which I was unable to rectify!

    I just remembered we're having a cheat stuffed marrow tomorrow. I cut the marrow into deep rings and microwave to soften. Put the rings in a dish, fill each with savoury mince and top with grated cheese. Brown in the oven. It works with Bolognaise too and probably chilli.

    I used to do that but haven't seen marrow for ages. Must have another look when I get back to UK.
