Cabot, is it enforceable? They’re relentless

Can anyone advise me please?

I had been receiving letters recently from Cabot financial. I wrote back and asked for proof the debt was mine.
I was then informed the debt had been sold on.
I informed the new collectors I’d asked for proof this was my debt and they handed it back to Cabot.

Cabot have since posted me statements from a HSBC account from back in 2008. Their ‘evidence’ states that in February 2012 I made a payment of £341.75. (I believe that payment was actually a re-embursment for PPI)
They are saying I owe £1000 and are pretty relentless with their calls and texts. It is getting quite worrying.

What can I do? Does anyone have any template letters they can help me with?
