Hi,
I’m looking at getting my groceries budget down and will be having some meat free meals in order to help.
The only things I can think of at the moment are:
(Chilli) Beans on toast and pasta with a homemade slow cooked sauce.
Can anyone offer other suggestions please?

Macaroni cheese
Pasta with pesto sauce
Cheese and onion quiche
Goats cheese pizza
Veggie lasagne
Baked potato with hummus

We also eat a lot of easy meals like mashed potatoes with veggie sausages or other meat substitutes and veg

Maybe not in this weather but homemade soup with hm soda bread

Cottage pie made with quorn mince and black beans
Lentil bake

You can be creative with your toppings, I like grated carrot, onions and some HM hummus0 -

Lentil soup.
I like !!!8216;fake!!!8217; chicken and matzo ball soup. It uses water, Osem chicken stock (it!!!8217;s vegetarian!) matzo ball mix + an egg, and pasta. A great hangover cure.0 -
Me and DH are veggie (have been for over 30 years). One of our absolute favourite meals is egg and lentil curry. We use the Delia Smith recipe. It's really easy and pretty quick and absolutely yummy.
Other meals we have are:
Shepherds pie with either just loads of different veg or lentils and veg. We top with ordinary mash and sweet potato mash
Various curries - chickpea and spinach is a favourite
Mushroom and spinach lasagne
Aubergine and courgette gratin
Shakshuka (loads of recipes on web)
Goats cheese and caramelized red onion tarts
Curried chickpea, potato and onion pasties
Goats cheese and beetroot tarts
Mushroom and onion suet pudding
Veggie sausage, beans and onions mixed together topped with mash
Veggie sausage casserole
Toad in the hole
Nut roast
Nut burgers

Thanks everyone! I’m ravenous now after reading the ideas. Sadly lentils and legumes tend to cripple me with IBS, but I’m sure I can modify things.0

I adore stuffed peppers with cheese and mushrooms topped with dried stuffing mix which gives a nice crispy topping, I do this with the lleft over green peppers and I also love veggie curry or lasagne I do eat meat now and again but have cut right back on it because of the cost and veg is a great substitute for meat0

Get a bag of soya/tvp mince from health food shop and use it instead of meat mince
Veg curry
Veg soup
Toms, courgette etc roasted in the oven with garlic and a drizzle of oil, serve with warm crusty bread
Buy the vegetarian nosh for students cookbook for a couple of quid on eb@y as it is a good book to work from.
