Levantine Cuisine....some help please

I have a love of eastern mediteranean food and wanted to learn more about Levantine Cuisine.
I tried this absolutely delicious chicken, onion and sumac casserole - 4th recipe in this link https://www.theguardian.com/lifeandstyle/2017/oct/24/20-best-middle-eastern-recipes-part-2-claudia-roden-moro-mackerel-kebab-ful-medames however I am now left with a 50g quantity of the 9 spice mix, and despite my searches I cant seem to find any other recipes that involves using such a mix. I will try it out on my next batch of koftas/meatballs but wondered if anyone had any ideas or experience of using this kind of spice mix in other recipes

Can't help re recipes but have you had a look at recipes involving Lebanese seven spice as it seems broadly similiar. This is very good blog http://syrianfoodie.blogspot.com/ which might inspire use.0

That spice mix will work very well in a marinade. I follow the 'basic' marinade recipe:
Something fatty (oil or greek yoghourt)
Something sharp (any citrus, sumac, vinegar) not needed if you've used yoghourt.
Flavour (spices, herbs, garlic)
Taste and balance with sugar / honey or salt if needed.
So, I would use this 9 spice with a bit of oil, and probably some orange juice, or fresh orange cut up, and marinade any meat, or butternut squash / celeriac for the BBQ.
I'd also add that it will keep in a jar, in a cupboard, for several weeks.0 -
I think nine-spice mix is widely used in Palestinian recipes, so it might be worth doing a Google search. There's also a cookbook called 'The Palestinian Table' which I think has quite a few recipes that use this kind of spice mix - the author is Reem Kassis and there are quite a few of her recipes online.0

Thanks Caronc thats useful and a blog I missed in my search, I did find the Anissa Helou one and the Taste of Beirut which gave me some good ideas. Great idea BD, thank you. I will try it tonight in a marinade with some oil and pomegranate molasses for my halloumi kebabs

Thanks Callie, I did have a look on that site named after a south american river, and found several books to put on my wish-list found one that covers Lebanon, Jordan and Syria so might treat myself to that one first as I haven't bought a cookbook for a couple of years.2026 Grocery Spends
