What's attacking my apples?

Something is attacking my apples.
It's a sort of "fluffy", sticky brown mass sort of thing - I usually find (but not always) at the "blossom" end of the apple. Think it's probably some sort of insect burrowing into the apple. I can wipe the surface bit of it off - but suspect the "probable insect pest" has already burrowed in?
I need to know exactly what it is and how to deal with it (organically obviously).
Any ideas please?
