Joint mortgage question

I currently have a mortgage on the house we both live in, we want to move to a new build but we will need a joint mortgage as the banks won't loan me enough based on what I earn.
My partner started work this year, but on a self employed basis, she invoices her clients and they pay her by bacs, she filled in a tax return for April 2018.
When applying for a mortgage, how is she going to prove her income, would bank statements be enough, or does she need actual accounts done? All they would show is the deposits from the clients, there aren't really any expenses.
