Slaw or lightly pickled veg.

A few weeks ago whilst away self catering I picked up a tub of what was described as a slaw.

It cost 99p for a very small tub, I really liked it but I feel it's expensive for what is a few bits of cabbage, carrot and onion.
I would love to recreate it, I've looked on line and I think it's just a case of some cider vinegar boiled up with some sugar, cooled a little and added to the shredded veg.
Has anyone got any further advice please?
It's not something I have done to cabbage before.

That is pretty much it. Don't forget a small pinch of salt - if you wash the veg, drain and 'bruise' the cabbage with your hands as you rub sea salt over it, then leave it to sit a short time, that'll keep the cabbage crisper.
Make it, cover well and leave in the fridge overnight - it gets better the longer you leave it.
You could also add cucumber, grated horseradish, beetroot or radish/mooli. Or less vinegar with some mayonnaise and a little wholegrain mustard with lots of black pepper.I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0 -
Just an addition to Jojo's comprehensive answer....
I would suggest as additions - some grated celeriac, and then JUST before serving some grated apple.
Oh ...and for me, the wholegrain mustard is NOT an optional extra, it is a necessity!0 -
We were having a barbeque today so I made the slaw.
I took your advice jojo, and used the salt, the cabbage did stay crunchy, so thanks for that.
Whilst looking for measurements of sugar to vinegar, I found this blog, I recognise the blog writer as the man from the Mary Berry best home cook programme, there are lots of really good recipes.

Another very simple slaw recipe is finely shredded cabbage (red or white, I use a mandolin slicer) with finely sliced onion and some grated apple. Mix together with salt and lemon juice (the lemon juice stops the apple turning brown).
If you use red cabbage, the lovely Nigella had a recipe for a rainbow slaw using red cabbage, finely sliced red, orange, yellow and green peppers and onion. Dress with a sweet/sour dressing of pineapple juice, lime juice, salt and a dash of maple syrup. Very tasty and very pretty to look at.One life - your life - live it!0
