Potatoes

I have a glut of potatoes that I picked up yellow sticker for 20p. Which was a bit silly really because i forgot that my own potatoes are nearly ready for harvest.

I have about 7.5kg that are really on the turn now and only the 3 of us in the house + a load more will be ready in a week or 2.

So as my freezer is almost empty I thought i could prepare some, freeze them and use them when needed or make a “potato heavy meal” but as my computer died a death I have lost all my favourite recipes.

So I wondered if anyone had any tried and tested recipes and any suggestions on how to freeze them (please if you don’t mind could you give idiot proof instructions also).

    Whenever I get a glut of potatoes, I cook and mash them then use an ice cream scoop to make little mounds of mash and open freeze them on a baking sheet. Then it's really easy to take out exactly however much mash you need.


    Or you could some dishes of dauphinoise potato - that's always a nice luxury.

    7.5kg is a lot, it's still a big bag per person...but fear not, there are low-volume solutions.

    I would boil at least 2.5kg, they will last in the fridge for a few days (think potato salad, roast potatoes etc). The majority I would shred, drain and then rosti ready for the freezer, it makes a nice accompaniment to a main meal / summer salad. And finally, I'd have a go at making potato pastry and freezing it for later.

    Don't freeze them raw, they taste foul once you defrost. I learnt this after making too many chips and thinking I was clever by freezing them.

    How do you eat potatoes normally? I have frozen part cooked roast potatoes, mash, stuffed potato skins (minus the cheese,I add that just before they go in), casseroles and curried potatoes.

    I pre-prepare the roast potatoes every Christmas now, just to save time on the day, using this method (I don't use duck or goose fat though) - it's basically making your own home roasts:

    ( Off-topic, but I also pre-prepare the parsnips and yorkies and freeze them so we can have home cooked with minimum slaving away :))

    Spot on so do I, once frozen bag them up and stick at the botom of the freezer or in small packets to fill odd empty space in the freezer
    The freezer costs more to run empty than full for some reason

    As long as they are old potatoes ,par boiled and frozen for roasting (They roast really well from frozen ) .freeze cooked jacket potatoes, mash, wedges ..endless really

    That's really interesting, and makes me feel better about the fact that nearly a month on, my freezer is still full! I've got control of it now though, with an inventory, and it's more very cheap stuff, like left overs or YL veg, but I've been thinking about money tied up in food in freezer (doesn't apply where it's home grown or hedgerow of curse) vs paying to freeze empty space, and I guess we all find our own level

    These are all such good ideas, we don't have potatoes that often nowadays but when we do, I'm definitely going to cook in bulk and freeze :)
    I love the idea of having scoops of ready made mash!
