    I find fresh fish tastes so much better. Sprinkle with salt and lightly fry in olive oil and it only takes a few minutes.

    I use a plastic steamer I bought from the poundshop for my veg.

    I agree that fish lightly fried is so much better when fresh, however the fish I tend to buy is usually frozen. I am envious of people who live by the sea. So much fresher and obtainable. The way fish is supposed to taste.

    To season fish, I would usually just use, lemon, pepper, olive oil, butter. Salmon I use teriyaki, piri piri, soy sauce. Herbs such as dill and tarragon. It would depend on what else I was making.

    The chicken, I very rarely use chicken breast. If I buy pieces I tend to buy thigh. Sometimes I debone them. I use piri piri, or wrap them in bacon or do an Indian coating with tikka, lemon juice and yoghurt.

    I think I cook it for about an hour, if it's going in the oven I do tend to put jacket potato or wedges, roast veg in at the same time.

    Pre-prepared crumbed chicken may not be high-welfare if that is a concern for you. Fishing is fairly strictly managed so your cheaper items will likely have been fished relatively well but hundreds of miles away and will have been landed onto a factory ship, processed & frozen at sea to keep the costs down.

    I'm a fish & chicken eater only also due to gallstones. (Low fat diet)

    Do you not pass a Waitrose on the way home? From their fish counter I buy cod fishcakes, fish fingers, and breaded cod. Also Salmon en crout, and garlic & rosemary salmon which is divine but pricey.

    They also do some very nice prepared chicken. I recommend the Cajun Chicken with some potatoes & veg.

    Also, yesterday I noticed they sell cold chicken for salads.
