Use of conveyancer in remortgage

We are switching banks after the first 2 years mortgage comes to an end. We are going through a mortgage broker. We've accepted a deal for 5 years, which had an incentive of 'fee free conveyance' on the initial illustration. However, now we've received the papers from the new bank, it says with this option, the conveyancer will act only on their behalf. After asking the broker, he said it doesn't matter, as this is a straight forward deal (no changes in title or anything else), and all the paperwork for the property purchase has been done already.He seemed to suggest that if we appoint our own conveyancer, he will be doing the work on our and the bank's behalf, so it's OK to let the bank's conveyacer do the work.
As this is the first time we are doing this, I'd like to ask: what are the risks of accepting this offer? What is the role of the conveyancer in the re-mortgaging process?. Is there a website that you can point us, so we understand the process better?. Many thanks anticipated!
