I'm a fan of this cake: https://www.waitrose.com/content/waitrose/en/home/recipes/recipe_directory/s/spiced-rhubarb-cakewithcinnamoncream.html
It was fine without the fancy vanilla bean paste, and I didn't bother with the accompanying cream either.
Rhubarb freezes well so you can always store half of it for later; makes nice flavoured vodka as Christmas gifts. They are an EYESORES!!!!0 -
Ooh that sounds lovely! I've bookmarked it0

I'm shocked and appalled. I went into my local Tesco today for some rhubarb, they haven't had any this year and are not getting any
The rain here is biblical, a perfect day for rhubarb crumble!Accept your past without regret, handle your present with confidence and face your future without fear0 -

My neighbour gave me lots from his garden on Saturday afternoon and I made a delicious crumble with honey and cinnamon, had the last of it today at lunchtime0

I usually make rhubarb, ginger & orange compote with our rhubarb.
Chop the rhubarb into one inch chunks, cut an orange into small slices and sprinkle in two chopped heads of bottled stem ginger. Mix together.
I add a little of the ginger syrup and a sprinkle of sugar to taste BUT NO LIQUID AS THE RHUBARB AND ORANGE PRODUCE PLENTY.
Cook for four minutes on a Medium Microwave setting. Delicious when served chilled with some natural yoghurt.0 -

I've been in Sainsburys today and they have it on offer at £1.50 for 400g (normally £2.00). I'm shocked and appalled at the price of something that's so easy to grow! Sadly, we don't have a garden but - if we did - it would be one of the things I'd have in the veg patch. Technically, it is a vegetable but Sainsburys have it on their website under Fruit - I guess most people think of it as that.
HC - some great suggestions for you to try, especially the one from Primrose for the rhubarb, orange & ginger compote - it sounds yummy.Be kind to others and to yourself too.0 -
Yes, the rhubarb, ginger & orange compote is delicious . You can also mash it all up until it's a thick gloop and fold in some whipped cream to turn it into a fool.0

Put the rhubarb in big chunks at the bottom of a roasting pan. Sprinkle on a little sugar, a fair bit of sea salt and pepper and roast a chicken on top of it with some more salt, pepper and thyme.
Makes a really nice vegetable accompaniment - sweet and sharp - goes brilliantly with roast chicken, roasties and green veg.I could dream to wide extremes, I could do or die: I could yawn and be withdrawn and watch the world go by.Yup you are officially Rock n Roll0 -

I like the idea of the rhubarb and custard cake, but I am sceptical - although it says drain the juice, rhubarb just keeps giving. Good to hear from someone that has tried the recipe though.
Here's what the great HFW has to say about rhubarb: https://www.theguardian.com/lifeandstyle/2007/jan/06/foodanddrink.recipes3 . Islandmaid is spot on!
I have made the cake and muffins five times now,to be honest I mixed all the cake mixture together with the custard and drained rhubarb. It was moist but not overly. My dad thinks this is the best cake he has had. I did make one that wasn't as good this was using Tesco ready made custard, for some reason this is more runny than the branded product I have always used and the results were not as good.0
