Hi there.
Me and my partner are looking to buy our first home together early next year when we've managed to finally save our 10% deposit. I'm also (hopefully) getting a new job within the next two weeks. So my question is:
When we apply for a mortgage to a broker, what evidence (in terms of proof of salary) do I have to provide? Would I have to give so many months pay-slips or is just a employment contract sufficient?

they will probably ask you for your last 3 months payslips as proof that you earn what you say you do, so if you have a new job that you have just started now, by early next year you should have 3 months worth of payslips to show them0

Different lender ask for different things, so you could be asked for paylsips, P60s, contract of employment or they might write direct to the employer for a reference.
