I wouldn't offer to resign - any reference could then state that a disciplinary was pending when she left. I'd stay and fight. Is she in a union - can't remember what you said about that.
And as already said, the DBS is a criminal record check so this wouldn't be on it. Has she had her copy of the disciplinary procedure?
Whether she resigns or is sacked (worst case scenario as it may not come to that) then she potentially faces sanctions if she claims job seekers/universal credit. She could run some figures through entitled to as a starting point.
Why have they told her to extend her sicknote, and does she have that in writing? Is she fit for work? I'd be sceptical that longer sickness could be used against her in future. If fit for work, I'd go in or they could pay me properly to stay at home.

Please take further advice. She may (will) be required to register with the health & care professional council (SSSC in Scotland). Part of the registration process may ask if she has been subject to any disciplinary process and may also ask if she has been subject to a settlement agreement.
This isn't an area of expertise so please get further opinion from someone in this field.
