Hya,
My friend has been asked to make a novelty wedding cake. One of the guests has a severe nut allergy. Normally she just won't go near the cake as just touching it would make her react. But this girl is the brides sister and she really wants her to share a bit of her cake.
So, my friend thought: I will just leave out the marzipan, but when she looked on the packets of royal icing, it had a warning sign:May contain traces of nuts.
Well, she thought, I will make the icing myself with glucose, gellatine, something else (can't remember the recipe) and gum tracacanth. When she bought the gum tracacanth that also had the warning on it..
No she is at her wits end. She thought of melted chocolate, that would go hard on top of the cake but a lot of that has nut warnings too. Butter icing stays soft.
So please if anyone has any ideas or information, if you are allergic yourself and have eaten icing before, was it safe?? I would really appreciate any comments and ideas.
ps. The cake was supposed to turn out like a gift and my friend was going to put two roses on the top.

Hi, i have a nut allergic daughter -she's 7, so wedding cakes haven't been a problem yet. She is also allergic to eggs so royal icing is a big no no too.
I would really recommend your friend use a chocolate icing. I used it on my Christmas cake last year. Waitrose stock Kinnerton chocolate which is completely nut free. They make it on a nut free site, check out their website http://www.kinnerton.com/. They do a 100g bar of dark chocolate that is great for cooking with. To make icing you need to melt it with some cream (equal quantities). That way the icing will harden, but will not shatter when cut. The only snag is that it won't keep for as long as royal icing, but it is so yummy that shouldn't be a problem.
Another thought, has your friend checked out the ready-rolled icing, or has that got a nut warning ? We tend to ignore 'may contain nuts' warnings, but it sounds like this lady is a lot more allergic than my daughter.0 -

We buy it for ds1 and me because it's dairy free. He doesn't like the G&B's 70% but really likes the Divine 70% and Divine are also doing a 70% after eight style mint for Christmas that seems to be dairy free - obviously we've had to test a couple of boxes!!!!
