How do we know the settlement is the right amount, can anyone tell me or how we can find out what to expect.

The calculation method is defined by the FSA. The input figures should be given to you and as long as they are correct, the calculation should come out fine.
You can pay to do the "mortgage fundamentals" calculation yourself online. I think it costs you are around £40 but it isnt really worth it unless you have doubts the their computer is doing it right.I am an Independent Financial Adviser (IFA).
