Shortcrust pastry is the easiest IMO my recipe is thus

    8oz Plain flour
4oz fat (I use half and half lard and hard marge)
    pinch of salt
enough cold water to bind it (if u want a richer pastry u can use an egg instead of water)

Rub the fat salt and sieved flour tog till its fine like bread crumbs..

dribble in cold water (add water a bit at a time) and stir with knife till it binds tog and you can gather it up into a ball and knead out the cracks on a floured board... roll it out quite thinly..

This is enough pastry to make a largish pie so I guess maybe double the amount if you want to make 8 individual pies...

    Hope this helps...

  • If you have a food processor you can do the whole thing in that. Put the flour and fat in the processor with the blade fitting. The mix will then go into breadcrumb mix. Add the water slowly bit by bit down the funnel. It comes together into a big ball. Add the water slowly though because it doesn't need much and it will come togther.

Have a nice time baking, homemade pastry is just the best!

    Hi there

    i use 1lb plain flour
    a sprinklle of salt
    4oz soft butter
    4oz soft lard

the best thing to remember is that pastry likes cold... so i put my mixing bowl in an empty sink (saves mess too)

I use a rubber spatula to cut the fat in or rub in with your fingers....when like bread crumbs add
about 11tbsp ice cold water - use a knife to mix it in to start with... then get your hands in and bring together a into a ball.. you may need a drop more water... .then wrap and chill for 15 mins...
you can also add some grated parmesan or a pinch of dried sage at the crumb stage.....

I used the cheese recipe yesterday to make ,individual ham, potato, onion n cheese flans.. and i have never had it fail.... good luck...

  • i made pastys at the weekend as i find these easier for a snack/work food than pies......and i admit - i cheated!!

i used the ready-made puff pastry as it's on offer in tesco at the moment, 2 500g packs of puff or shortcrust for £1.20.

it costs a little more than homemade but it is far less stressfull when it comes to puff pastry :)
