Christmas Cake Help ..

Hiya

I hope this is in the right place.

I have baked a christmas cake tonight and am about to take it out of the oven. Whats the proper way too cool them does anyone know?

I know different cakes call for different cooling methods, ie leave in the tin, take out and put on a wire rack.

I know that for storing i need to wrap it in greaseproof paper and then tin foil, but I am almost certain thats to be done when cooled properly ??

Any help you can give would be brill.

    Hi there

    I always place my cake on a cooling rack whilst still in its tin..for about 1hr.. it becomes a bit more solid and so less likely to break...
    Then i lift it out and put it upside down - so that the top is on the rack.. so that when you come to ice/decorate you have a nice flat surface to work with... i take away the greaseprrof after about an hour.. drop a clean tea towel over if you want to leave out to cool completely over night

    and once completely cold wrap in greaseproof and then foil...don't forget to feed it with alcohol

    Its due out of the oven and time within the next hour (the recipe said 3-4 hours) and i'll do what you said.

    This one wont be getting any alcohol as I've baked it for our mam & dad and they don't like it lol

    Am baking another for a friend tomorrow night and know she likes a bit of tipple now and then so will do that to hers.

  • A slightly different take... I personally always let them cool completely in the tin, then I wrap in foil, spike with a skewer before spooning over my alcohol, then store in an airtight tin. Always works for me.

    I'm not sure how you could moisten it without alcohol... perhaps tea? I still put a little alcohol on and it can evaporate a little, I feel it adds so much. I've never made one without alcohol so I don't know what it would be like.

    we're a strange lot .. we like it dry lolol
    I've followed the same recipe our mam used to use when she baked them and she never added any extra fluid to it at all. she wont eat most shop bought cakes because they are too moist.
    Thanks for the advice tho, it will come in handy when i cook one for the school.
