Tarts anyone?

Courtesy of a supermarket yellow sticker mad moment, I now have a freezer drawer full of ready roll shortcrust pastry.
I need some ideas for savoury tarts that I can take to work for lunches, either as individual tarts or as slices.
Basic criteria - minimal amounts of egg (I don't like the texture of quiches), minimal amounts of cream, nothing fishy, freezable, not too much of a faff to make.
All ideas appreciated.

Leeks and potatoes are in the 19p super six deal at Aldi this week, so it would be inexpensive to make some leek, cheese and potato pasties.0

Roast vegetables - onion and pepper principally, but you can include almost anything + a slice or 2 of goats' cheese (watch out for the YS on those as well!)
I do batches of roast veg, and then use them in all sorts of things - a favourite is stirred into cous-cous for dinner.
I'm also quite a fan of 'pizza tarts' which you can make with tomato puree, or slices of tomato + some cheese.0 -
Something my Mum used to make. Really it's sausage meat mixed with herbs and sauted onions if you want. patted into a lined pie plate, topped with sliced toms and pastry OR make dips in the meat, break in an egg (about 1 for each two servings) top with pastry and bake. When cut each slice gets half an egg0

Use tomato paste as a base, then anything you like eg lo/going soft peppers, mushrooms, and make a savoury mix of finely chopped capers, olives, sun dried tomatoes, pickled silverskin onions seasoned with salt & pepper, salami or ham then crumbled Brie or mozzarella - basically anything you would like:)
