I believe (just personal opinion, not based on any statistics or evidence) its because the majority of games are now FPS and playing FPS in splitscreen (especially online multiplayer) is bloody horrendous. Thus game devs have moved away from it.

There's a few reasons why split screen was removed but that's not one of them, the first one is to push people to online play - some of the first games that were removing split screen play were ones that offered online multiplayer. It makes financial sense of course because having four consoles, four copies of the game and four online subscriptions is better than just one as well as populating the online community.

With large 4K TVs and consoles outputting 4K, split screen is far more viable than it ever was and even aside the fact FPS games work fine in split screen, there's a lot more games out there than FPS online.
