Birthday cake help...

It is dd's birthday on wednesday and this year she wanted me to make her a castle cake.
So i am making 4 sponge cakes and planning on layering them together with butter icing, and then i am going to over the lot in white icing with a pink door and flowers etc.
I have been told to make the cake so that it can sit 24 hours before cutting it, but will the butter icing be ok, or could i use something else to sandwich them together.
I am also using butter icing to put over ice cream cones, should i leave it untill wenesday morning before i do this part?
Can you tell it's my first time making a birthday cake..lol

    I don;t know about the icecream cone part as i've never done this, but i can tell you that the butter icing will be fine overnight - i've had butter icing on a cake for as long as a week and its been fine (although, admittedly, that was in a tin and it was a normal cake, not a castle.. LOL).

    the only other thing i can think of which might help: mom did a cake for me when i was little, she used marshamallow cubes to build the walls around the castle. She put loads of work in on it and it looked great. Unfortunately, little toe rag that i was, i burst into tears and told her i didn't like marshmallow (and i don't know why i said that cos i do!). Anyway, don't let that put you off.. LOL, if you want to nick the idea. pink and white marshmallows look nice, layered, or you could use those minature ones (you know the ones that they put into hot chocolate).

  • I always wanted a pink castle cake, my best friend had one, but I never got one! I was a deprived child!! ;)

    I know my friends mum (who now in a bizare twist of fate is my step mum) used paper doilies for the tops of the castles, cut and twisted into cone shapes (looked very pretty). She also made the turrets out of cake made in washed out baked bean cans and a portcullis made of sugar cubes (she is a talented lady)

    I can't wait to make one for my DD but she needs to be a little older I feel - she won't appreciate it aged 2!!

    not sure bout the butter icing as all of these use fondant icing (which tends to be pure white and therefore can be tinted to a nicer shade of pink!)

  • After asking for advice on here at the weekend, thankfully the party is over and the cake went down a treat.
