lamb shank...what to do?

Hi I have a lamb shank that I got from the butchers TBH I normally only get them pre cooked in mint gravy from supermarket for myself as a treat because its only me who likes the gravy and I am wondering what is the best way to cook it..any ideas if we have it for lunch its just me and our 6yr old if having for dinner tonight it will be me,OH and our son (will it go that far?) I have a full freezer,store cupboard and loads of veg.

Lamb shanks are yummy but normally need long, slow cooking so I doubt it would be ready for lunchtime. Depending on the size it might stretch to feed all three of you if you do plenty of veg and potatoes to go with it.

I would brown it, pop it into an oven-proof dish and add some potatoes, carrots, onions, black pepper and stock (a couple of stock cubes disolved in a little water will be fine). For extra flavour add some herbs (garlic and rosemary work well with lamb) or a good dollop of mint sauce. Tinned tomatoes also go well.
