Passionfruit Curd Recipe - Easy and Delicious!!

We made this passionfruit curd yesterday and it is delicious. We had it in ready made tart cases with a dollop of cream and it was lovely!!
Very easy to make as well.

Ingredients
4 eggs
185g Caster Sugar
80ml Lemon Juice
3 Teaspoons finely grated lemon rind
125g Passionfruit Pulp. (this is approx 7-8 passionfruits so i found out)
200g Unsalted Butter, chopped
1. Beat the eggs well, then strain/sive into a heatproof bowl and stir in the remaining ingrediants.
2. Place the bowl over a pan with simmering water and stir with a wooden spoon for 15-20 minutes, or until the mixture coats the back of the spoon.
3. Transfer the curd to a heatproof jug and pour into clean, warm, sterilized jars.
4. Seal while hot. Turn the jars upside down for 2 minutes, invert and leave to cool, then refrigerate. Store in the fridge for up to 2 weeks.

Instead of doing it over the stove it works just as well in the microwave. Put on low setting (cover with glad wrap first) and nuke for 3 mins, stir then another 3 mins. Done.Don't worry about the world coming to an end today. It's already tomorrow in Australia.0
