    Hi I made this for my son's birthday last year, one with wheat and one gluten free and I swear the children were fighting over the gluten free one. There wasn't a piece left.

    Carrot and banana cake

    8oz flour (I prefer orgran as you can eat the cake mix raw)
    2tsp baking powder
    2tsp cinnamon
    8oz carrots grated
    3oz marg/butter
    2tbs veg. oil
    3oz brown sugar
    4tbs syrup or honey
    2 mashed bananas
    2tbs soya milk
    1 tsp vanilla essence.

    oven to 170C GM3. Mix dry ingredients and carrots. Melt marg and stir in wet ingredients. Pour the wet into the dry, beat well, it should be quite a heavy mix. Put in an 8"cake tin and bake for approx 1 hour 10 minutes. Test with a knife or skewer it won't come out clean but shouldn't be wet. It benefits from some icing or frosting.

    Sorry, am I being dim :confused: How is this recipe gluten-free :confused: Do you just leave out the flour?

    fruit cake works really well

    1 cup of hot tea
    1 bag mixed fruit
    1 cup sugar
    1 tsp mixed spice
    2 eggs
    2 cups of flour
    milk

    soak fruit over night in tea, then mix in sugar, flour, and mixed spice, add eggs, and combine, then add enough milk to make it bind together.

    bake in oven for about an hour 180'c or until cooked through.

    thanks for the help folks!
    One of the other recipes I saw mentioned gluten free cocoa powder but I couldn't find it. Does it exist? and where should I be able to come across some?

    Sorry, I'd never heard of Orgran and as it had no initial capital didn't realise it was a brand name :o

    Sorry, I didn't mean to cause confusion. The cake can be made with ordinary or gluten free flour equally well and if I had spellchecked I would have spotted the droped capital.

    There isn't any gluten in cocoa powder :confused: . My tub of Waitrose cocoa powder says '100% cocoa powder'

    Be careful, strangely enough some does contain gluten. The strange rules we have in the UK about labelling don't require gluten at less than a certain level to be shown in the allergy lists. That lower limit is still too high for many coeliacs.

    I don't have a food bible anymore but if there are any other coeliacs out there that have a copy to hand maybe they can check that item is OK.

    On the same subject it is worth checking how intolerant someone is. I can eat gluten free flour made from wheat, but many coeliacs cannot as there is still trace gluten in it even though it is legally allowed to be sold as GF. Many coeliacs will only eat flour from non wheat/barley/rye sources like potatoe or rice flour and they are very tricky to cook with.

    For most gluten free recipes a touch of xanthum gum can make all the difference .

    It can get complicated and even though I have been gluten free for many years I still get caught out. Just recently for instance I discovered that the pickled onions I buy have gluten in them from the vinegar..bother and blast.

    Having now tried all the wheat-free bread sold in Tesco/Asda/Sainsburys I am totally disgusted that the bread-makers cannot get together and make some wheat/gluten-free bread that is fit for human consumption.

    I have a bread-maker

    Anyone tried successfully to make fabulous-tasting wheat-free bread by any chance?
