Yorkshire Pudding Mix - How Long is it Good/Safe For in the Fridge?

Hello

Thinking of making some yorkshire puddings this week. Then fill them with veggies, or sausage/mash.

But not sure whether I need to make up a tiny, tiny amount (serves 1), or if it's OK to keep in the fridge ... and how long for.

I have no freezer.

Or any other ideas?

I did use a packet once, put half of the mix (liquid) in the fridge and the next day it was set hard!

It goes spotty & yuck after a few days but cooked ones keep longer & freeze well

To make one to fill with things I use a 7" sandwich tin so that they look like the ones in pubs. To make one, you would need 2oz flour, 1 egg and about 3floz milk and water mixed - so you wouldn't have to keep the mix. (For 4, I use 8oz, 3 eggs and 15floz respectively)
