I made my first jar pesto today, it’s yummy. Apart from rolling pasta in it, and drizzling on salads I could do with a few suggestions for use. Also how long will it be ok to keep in fridge. Thanks6

Hi Marionmgcars - Home made pesto is delish. Looking forward to making some myself this week. I mostly use it with pasta but I also like it spread thinly on sandwiches & wraps before filling with mozzarella & tomatoes. I sometimes spread it on a pizza base too, when I'm making pizza and I like spreading it over fish before cooking it in the oven too.
I know it is supposed to keep in the fridge if the surface is covered in a layer of oil but I don't know how long for because I put mine in yoghurt pots & freeze it instead.

Hi Foxgloves and gang. How are you all? Been busy clearing out Garage, sheds and cupboards. Skip full. Sold £200 worth of stuff so that was brill. Spent the weekend with our girls celebrating hubby's 65th birthday. Today was a biggie for me I used £1000 of our Emergency fund and paid off a chunk of my CC!! I panicked doing it, worrying the what if there was an emergency and we didn't have the money? Its done now and I do feel better for it. So its been a good couple of weeks. Next is my Craft Room to sort out and sale stamps etc that I don't use anymore. Finished knitting a jumper for DD now to pick up stitches around the neck etc and sew it up. Now our other DD wants one knitted. Keep me busy hey ha ha

Pesto stuffed in chicken breast is good, with a bit off extra cheese if you’ve got any lying around. Or to spruce up a home made veggie soup. Or dolloped in a tomato based cassoulet type thing. If you think of the individual ingredients and then think what would they go well with? It may be easier to match things up.

Lol, yes that would definitely have been the aura from my halo, PurpleFairy, as I only need 7,500 steps each day for Week 1, but achieved 11,375. Early days though.

Pixiehouse55 - Yes, clearing out is very satisfying, isn't it? And you've reminded me that I have an item to list on ebay. I sorted out most of my craft stuff fairly recently, am still working through using up my yarn stash. I think there is still a large box of craft stuff up in the loft though, which I shall need to tackle when we feel brave enough to have a major declutter up there.
You have been brave using your emergency fund, but I will always understand people just wanting their debts gone because that was how I felt as soon as I'd finally had my LBM. It's a balance really, isn't it, as it is counter-intuitive to be paying interest on debt if we have savings to pay it off, but there is also the risk of an emergency leading to unwanted credit card use. I think that will always be a dilemma. I bet it was nice to pay that £1000 off though.

Evening Sweet-peas,
Not the most productive of days but no money spent & I achieved the required number of steps for my 30-day step challenge. I spent ages yakking to my sister on Skype but did also manage to do the ironing, a short fitness video, make & fit a pile of face mask liners from an old cotton pillowcase & pick a bowl of courgettes.
I did try HFW's leftovers recipe for chicken hash tonight & it was surprisingly nice. I used one red & one yellow pepper instead of two red, but did everything else the same & we ate it with a drizzle of sweet chilli sauce & courgettes sauteed with garlic. It's something else for my leftover chicken repertoire anyway.
I've started an intriguing audiobook today - it's a Swedish crime novel - I read quite a lot of Scandi-crime as I like trying to solve the mystery - but is actually set around Exmoor, so it feels a bit different. I find I can get through heaps of kitchen jobs if I'm listening to a good book.
I've actually got the motor tomorrow morning so I think I will probably go into town to start sorting out presents for my sister's birthday. I could also see if the fabric stall is on the market as he has a good choice of stuff at good prices. But I won't spend for the sake of it. Not any more.

thanks thanks for the recipe tips for my pesto sauce. Had pasta & garlic mushrooms with a dollop of sauce today & was lovely. Have popped the rest into freezer as too good to waste.8
