Have you been tested for Coelic’s disease? I was listening to a Freakonomics Radio podcast about it and thought of you. Amongst other things, the prevalence is surprising. Italy routinely screen all children and find it to be 1:300, that’s one person in every 300! It is a faff as you boil oranges for a couple of hours and almond flour isn't the cheapest ( better priced in aldi) but this has real cake texture and no one I served it to could tell that it was gf.
My brother is coeliac and he loved it as a treat.
As for cheap healthy food I have an aldi and a lidl near me and I check out the veg offers ahead of time and then do a brief menu plan in my head. They are also often cheaper for things like quinoa which is great when gf used in salads for work ect.
I also eat a lot less meat but I'm not gf myself, just aware for others.

I have the recipe. It’s a traditional Jewish Passover recipe and that made me think of something else: if you live near a Jewish community, now is the time to find and stock up on ground almonds, rice flour, potato flour and “kosher le pesach”/“kosher for Passover” baking powder which, by definition, won’t have wheat flour in it. Passover is in a couple of weeks and the prohibition on leavened items means that anything that is Kosher for Passover will be wheat free.

Great tip about going to Jewish shops. Not sure where my nearest are though.... I have just moved back to west Yorkshire from london so would probably have to go to Manchester.0 -

Lemon - for an otherwise cheap sardine recipe. It uses the zest unfortunately or I would use juice which we keep in the fridge. I will give it a go without the zest next time and see what the difference is.
Tesco also now sell frozen zest. I'm no expert on Jewish or kosher food, but I don't think it's necessarily the case that it will be wheat or gluten free.
