How much juice in a lemon/ Lemon Curd

I've been making home made lemon curd all my life. It's been more successful and less successful, but always scoffed and not wasted. I've often wondered about recipes (the Good Housekeeping one I use included) that just state '4 lemons'. I've sometimes added an extra one if they have been very small.

Well, this week I went to Costco and thought that the lemons and limes looked good so got some. Also have some that came from somewhere else, can't remember where. I set about making some lime and lemon marmalade with some of them. While I was chopping I reflected about how I would go about the lemon curd.

The reason for this is the sheer size of the lemons. Marmalade is done by weight, so no problem. But the normal ( good size ) lemons are about 120g and the Costco ones up to almost 300g!

Is there anyone out there that uses a recipe for lemon curd that uses a ml measure for the juice? I have found one or two on the internet, but both were USA and the other proportions didn't seem correct to me. I think my current recipe is 4 lemons, 12 oz sugar, 4 oz butter and 4 eggs.

Would be interested to hear. Does anyone make a lime curd or a lemon and lime curd?

  • I use the River Cottage recipe - 200mL lemon juice, zest of 2-3 lemons, 125g unsalted butter, 450g sugar, 4-5 large eggs (200mL beaten egg) for traditional lemon curd (variation at the end). The appley lemon curd is really yummy :drool:

    I've got it somewhere in the back of my mind that an average lemon is equivalent to 2 tablespoons of lemon juice. I'm sure it used to state this on bottles of Jif lemon juice though I can't see any mention of this on my current bottle.

    I make mine in the slow cooker, and just googled the recipe. It seems about the same as yours purpleivy, except that they put in the juice and rind of an orange as well as the 4 lemons..
    It is absolutely delicious. The lemons seem particularly good this year.
