Taco Soup. but it's not a soup!

This has become a family favourite in our home. It makes tons and can be frozen. It uses lots of ingredients but I buy the supermarkets own brands for the tins where possible. Not too spicey and like a mild chilli.

Taco Soup

1lb mince
1 pkt Taco seasoning
1 Jar mild salsa, check out offers and supermarket deals
1 tin condensed tomato soup, no water added
2 tins sweetcorn, do not drain
2 tins red kidney beans, do not drain
2 tins chopped tomatoes
1 small onion diced

To serve

Taco chips
Sour cream
Grated cheese

Brown the mince and onion together, no oil needed.
Place in a LARGE ovenproof dish
Add rest of ingredients with liquids from corn and beans
Mix well
Place in oven and cook for approx 2 hours on 180/4
This will thicken and have the consitency of chilli.

Place a few taco chips in an individual dish, place soup on top, add a spoonful of sour cream and some grated cheese
You can serve just with cheese and jacket potatoes.

Great to cook in slow cooker but will need to halve quantity

Not cheap cheap but goes a long way great for parties, bonfire night etc.
