Employer sent sensitive staff details out?

Not sure this is correct board or even if I should be too concerned, but I've just had a letter from my previous employer saying that my personal details and sensitive staff data was sent to a non secure email address outside of the UK.
It does say that my bank details are not included, but name, address, NI number, Dob, diversity and salary are and then gives information on what to do and check.
The issue was only found when they installed an email monitoring software system in December.
Am i entitled to anymore information from them, such as who or which dept, sent the email,? how many others are involved etc?
The letter says there's been two recent instances, so does that mean two persons details or its been done twice.
Any advice beyond what they've told me to do- check credit report, register with cifas, change passwords etc. would be greatfully received

The first time we said hello, was the first time we said goodbye. As the angels took your tiny hand and flew you to the sky-you forever left us breathless. RIP my beautiful granddaughter
