hi everyone,
trying to come up with something to do with sausages a carrot, mushrooms tinned chopped tomatoes onion and broccoli. don't want to just grill the sausages and have em plain, BORING!!!!
any ideas? i have other bits and bobs in the cupboard too so any ideas appreciated

do you have onion? if so..take the sausages out of the skin..mix with chopped onion and grated carro, seasoning and a pinch of mixed herbs.. form into meatballs..roast in the oven...
Use the tinned tomatoes a pinch of sweetener , herbs and seasoning and blitz to make a tomato sauce..... steam the broccoli... mix it through the sauce, stir in the meatballs and serve with pasta

My mum used to make a really tasty toad in the hole. made as usual but fried onions mushrooms and toms added to the tray with the sausages. Sounds a bit yuck but tasty. Serve with the carrots, Broc and gravy? failing that an 'autumn' casserole would be nice with the things you have (I like to add beans too)0

made a really nice sausage casserole the other night.. just fried the sausages (or you could grill them) initially to get them coloured on the outside, don't worry about cooking them all the way through as they'll go in the oven too. I then cut the sausages into slices, mixed with a tin of beans, cut some very small cubes of cheese and stirred that through the beans, along with some tomato ketchup and worcestershire sauce for flavouring. I made some caramelised onions on the side, stirred some of them through the beans, I then boiled and mashed potato and put them ontop of the bean/sausage mix and cooked in a medium (180*C - GM 5?) oven for about half an hour to 45 minutes. served it with the rest of the caramelised onions on the side.
(caramelised onions: chop into slices, put a little veg oil in the pan, cook long and slow. Once they start to colour, mix in a teaspoon or so of dark brown sugar and some balsamic vinegar, and allow to cook down even more.)
you could easily mix the other veg in - stir some mushrooms through the onions to fry and reduce those down, maybe stir some broccoli through the potato, boil the carrot in with the potato and mash it as well?

I agree with the sausage casserole. Fry the sausage and onion, add the tomatoes, some stock, the mushrooms and some wine (in the unlikely event you have some lying about:p ) and simmer. Serve with the brocolli and spuds or bread.;)0
