I have loads of the above left and am loathe to throw them away, does anyone have any recipe suggestions please x

You can freeze the spuds. The Yorkshire can be frozen... and, depending on its size/shape could alternatively be used to "wrap" a sandwich filling, hot or cold, sweet or savoury. e.g. cooked apple/sultanas rolled inside the Yorkshire and splashed with custard.0 -
Agree with freezing to use whenever.
The potatoes can be sliced and fried in place of chips or layered and used in hotpot, dauphinoise or boulangere. So, really just use them up as potato side dishes.0 -

get some cocktail sausages and make mini toad in the holes and use the roasties to make a crispy mash or dauphinause on the top

You could make what my mum used to call ' Bubble and Squeak ' put what ever veg, tatties you have left over in a dish and mash everything up it will be yummy and lumpy still, then add seasoning and if you want to splash out add any left over cheese with a wee bit of flour make patties and place in a pan to brown, Very yummy with picked cabbage!
You can use the Yorkshire's and put a wee cooked sausage in them and use them as toad in the holes, I make these and freeze them for a quick supper!
