Re-mortgaging to buy abroad

I am planning to move to NZ and have found a house there is like to buy. Because interest rates are so much higher there, it seems to make sense to remortgage the house which I own outright here. But I have no idea how to do this & I live in the far north of Scotland, miles from anywhere to get any advice. I have no debts and a good income. So:
How do I remortgage my house
Who should I go to, to get this done
How long might this take?

What are you going to do with your current house? You can't get a standard residential mortgage if it's not going to remain your residence.0
