    I have found that the meat does definitely dry
    but if you are cooking something where the sauce is integral to the dish like a curry or stew- this is not a problem.
    if its a slow "roast" then the meat needs slicing or shredding and then soaking in the gravy ( or juices) before serving if its not going to be horribly dry - it is surprisingly absorbant if you do this..amazing how much liquid disappears back into the meat - or am I doing something wrong to it in the first place?
