Yuca. How do I cook it?

While I was in Spain last week I bought a Yuca. I assume it is a root vegatable (because I bought it in the veg section in Lidl and it looks like a brown root). It was on special offer so I couldn't resist.
I was thinking of peeling, chopping and roasting it and having it with our roast dinner this afternoon. :rolleyes:
Have any of you ever tried Yuca? Is it similar to any other vegetable? What shall I do with it?

Wow, thank you Pollybear and Trying-very-trying. I wish I'd bought 2 now.
I am going to try the yuca & galic mash recipe posted by Trying-very-trying; and once I see how much is left ater I've peeled and cored it, there might be enough left for one of the other recipes.
