Does anyone have a tried and tested recipe for stuffed peppers please? I ate them on holiday in Greece this year and I loved them but I’m struggling to find a recipe that looks as appealing as those I tasted there!

What were the ones you had in Greece stuffed with? Mince/rice combinations tend to be popular. I like mine stuffed with a mix of ratatouille, cooked rice and feta or goats cheese. It is very hard to replicate the time/place/atmosphere that can make dishes eaten on holiday very hard to get quite the same.0 -

Love stuffed peppers, you can stuff them with anything you have! 12 years ago I found myself on a fat free, alcohol free diet a few days before Christmas, due to obstructive jaundice as a result of gallstones. Christmas dinner that day was stuffed peppers with rice, veggies, lentils, tinned tomatoes and spices baked in the oven with veg and no potatoes - it was really nice but could have been better with cheese on top, but not worth the risk.
The only spanner in the works was pudding was a tangerine , I could not eat Christmas pudding (only me and mum ate it anyway) mum had Apple pie with the rest of them - we froze the pudding for 6 months and ate it after I had recovered from surgery!!Dogs return to eat their vomit, just as fools repeat their foolishness. There is no more hope for a fool than for someone who says, "i am really clever!"0 -
