    Probably not immediately helpful to OP, but one of my all-time favourite cook books, which is a great read, is Elisabeth Luard's European Peasant Cookery. Full of cheap traditional tasty dishes, with lots of history and ideas. In there you will find veggie heavy dishes from all over.

    One of my go-to dishes if I'm strapped for time/energy, which is also inexpensive, is to fry up a diced onion in the bottom of a saucepan, add a tin of chopped toms, a selection of herbs, and a few chopped up veggie hot dogs, and sling this over tagliatelle.

    You could divide the sauce in half without the veggie hot dogs and add a suitable protein source to each half so that your omni chap got his meat fix.:o
    (Ooh, that's good - add a protein SOURCE to the SAUCE.......... I'll get my coat).
    If your dog thinks you're the best, don't seek a second opinion.;)

    If your OH is happy to eat anything you cook why not just stick to veggie until the end of the month.

    Even if you are making a veggie and meat bolagnase dish (could also make the base for lasagne, Shepards pie or topped with pastry etc) add lentils and grated carrots to the meat version to make the meat streach (as you would for your own version). Years ago I did a veggie and a meat bolagnase as I had visitors, the meat dish when it cooked down did not look enough to feed the visitors so I added all the left ovef lentils and bought carrots and grated into the mix to bulk it out (as I could not afford more mince). A few weeks later my friend asked me for the recipe as her kids had turned their noses up at her spag bo l, as it was not as nice as auntie sillyvixens!! I had to come clean!

    Maybe make a pot of both and bulk out the meat mix with lentils and grated carrots and make several meals using the basic mixes as a base.

    We are a family of 4, 3 meat eaters, 1 veggie. I try to make it that we are eating the same sort of meal.

    Eg, burger vs veggie burger, wedges, salad

    sausages vs veggie sausages with potatoes, veg in a large yorkshire pudding with onion gravy.

    Chilli vs veggie chilli with rice

    bolognaise vs veggie bolognaise with pasta.

    curry vs veggie curry with naan bread.

    you get the general idea.

    I am also gradually moving our household on to the veggie version is there as the base, but then the meat eaters add meat. Eg I will have cheese pizzas in but a separate packet of pepperoni, which can be added if wished.

    I did this because I did not find it cheaper when DD became veggie buying 2 smaller versions of things (1 meat, 1 veggie) compared to 1 larger that we used to all be able to share.
  • I'm a veggie that sometimes cooks for meat eaters. How about Toad in the hole. Perhaps with mash and peas. You can make him a bigger version with meat sausages and you with veggie sausages. Just use the same batter and separate dishes. Veggie onion gravy to go with both.
    How are you with risottos? Pumpkin risotto with sage is really simple and cheap and you could mix in some ham or bacon for him.
  • Thanks guys and gals there are some great ideas here which have inspired me a lot. I do love Jack Munroes recipes but have yet to make any but will definitely try the bean goulash as it's got some big thumbs up :)
  • Do you both eat eggs? 4 eggs, add a little water and combine, salt and pepper and the mixed herbs into the eggs. Grated strong cheddar cheese, smoked paprika, mixed herbs.

    Heat the oven to 190o

    In a frying pan with a metal handle, not wood, heat a little oil, when the oil is hot, pour in the eggs, when it starts to set, add the cheese don't mix in just sprinkle the cheese onto the egg, sprinkle the top with the smoked paprika.

    Put the pan in the oven for about 15 - 20 minutes until the egg is set. Turn out and divide in half, make sure you use a thick cloth when taking the pan out of the oven, it will be VERY hot. add a jacket spud or salad. You can also cook a chopped onion in the oil before adding the eggs. I also make it with mushrooms. If your boyfriend wants meat cook a couple of rashers of bacon to go with it. Hope this helps.

    What is wrong with eating simple, beans on toast, scrambled egg on toast. Marmite spaghetti being a very cheap belly filler, Jacket spuds, omelette, risotto
