I followed the recipe, but when they were frying they started dissolving. I saved them by scooping them out and finishing them under the grill. Any idea why it happened?
The oil was hot.

Hi there
Did you chill them down before frying? that will help them stay together...-6 -8 -3 -1.5 -2.5 -3 -1.5-3.50 -
Same thing happened to me before. I was using canned chickpeas and it may be the water content as Sola mentioned. I tried this foolproof falafel by Ainsley Harriott http://www.bbc.co.uk/food/recipes/database/foolprooffalafelwith_2086.shtml
I think the secret is using dried chickpeas left in water overnight and adding some baking power and/or flour.0
