help re: roasting vegetables

hi, i was wondering if anyone could help me?
i want to roast - potatoes, sweet potatoes, carrots, parsnips, leeks and mushrooms.
how long do you think they would take approx and would i put them all in at the same time or do i par boil potatoes?

Well, leeks + mushrooms don't roast well. They ahve too much water in them. Everything else will. Just parboil the potatoes, then gently mix them with the chopped up parsnips, carrots, sweet potatoes and salt + pepper, a little oil, some garlic cloves, unpeeled, and rosemary if youv'e got it. Into a roasting pan, then roast on 200' for 35-45 minutes. Make sure the roasting pan isn't too full or they wont' roast but steam.0

The potatoes will definitely be better if you boil them a bit first, yes. Personally I'd be tempted to do the same with the carrots and parsnips as well, but that might just be me!
As for how long, I'd guess it depends how well done you like them. Potatoes can be done between 35 minutes and a whole hour - I would think by the end of an hour your mushrooms would be quite shrivelled, so you might want to do them separate, unless they're huge ones.Hurrah, now I have more thankings than postings, cheers everyone!0 -

I put mushrooms in with my roast veg; but put them in later than the rest of the veg. A few wedges of red onion is good too.
I dust it in a herb/spice seasoning before it goes in the oven - basically a mix of whatever is on the cupboard - garlic powder, dried thyme, pinch of mustard powder, paprika, maybe a bit of chilli..... it varies everytime.0 -

These two recipes cover most of the things that you want to do, plus a few more! I love mushrooms cooked in the oven, but they do produce a lot of juice, so maybe give them their own dish?

Carrots take the longest. It would be best to parboil carrots, parsnips and potatoes, and make sure the carrots are little. The sweet potatoes (kumara) can be put in with the parboiled veges, as they don't usually take a long time.
